Egg Tacos

1. Heat up 8 taco shells.

2. In a pan, mix up 8 hard boiled eggs (chopped in chunks), 1 c. of cream corn, 2 tsp of taco seasoning. Heat the mixture up as you stir it over the stove. When heated up, add 1/2 c. of cheese.

3. Place that egg mixture into the egg shells and add some more cheese (’cause cheese’s always good). Finally add lettuce, salsa, sour cream, etc.!

Burritos aux oeufs et à la salsa

1. Beat 8 eggs, 1/4 c. milk, 1 onion (finely chopped), salt and pepper together.

2. Cook that egg mixture in a pan. *When it’s starting to cook, break it into big chunks.

3. Place a piece of lettuce on a tortilla, then spread some egg chunks on it. Add some grated cheese, salsa and sour cream. Roll and eat!

Strata au bacon et cheddar (4)

1. Cook 1 cup of chopped red peppers and 1 cup of chopped onions (in butter).

2. In a greased pan (9X13), spread 6 slices of bread (cubed, without the crust). Cover the cubes with the peppers and onion mixture. Then add on top 6 bacon slices (cooked and crushed) and 2 cups of grated cheddar cheese.

3. Make another such layer with 6 slices of cubed bread, 6 slices of cooked and crushed bacon and 2 cups of cheddar.

4. In a bowl, beat 6 eggs in 3 cups of milk and add 1/2 tsp of moutarde en poudre, some salt and pepper.

5. Let sit in the fridge for three hours or overnight.

6. Cook at 350 for 45-55 minutes.

Tortilla Quiche

1. Preheat oven at 350.

2. Grease a pie plate and place 4 tortillas in it (it’ll take three to go around, slightly on top of each other and let them go over the edge of the pie plate about 1cm). Then place the fifth tortilla in the middle.

3. In a bowl, lightly beat 8 eggs, then add half a cup of cream corn and a Tbsp of taco seasoning. Add salt and pepper. Pour that mixture onto the tortillas in the pie plate.

4. Add one cup of ground smoked ham and one cup of grated cheese on top.

5. Sprinkle half a cup of chopped green and/or red peppers.

6. Bake in the center of the oven for about 25-30 minutes or until the middle is cooked.

Quiche

Crust: use this CRUST RECIPE

Roll your dough and place it in your “pie dish”

Egg mixture:

In a bowl, mixt together: 3 eggs, 1 c. milk, 1/2 tsp of basil, salt and pepper.

Melt 1 Tbsp of butter and mix 1 c. finely chopped mushrooms in butter.

Add your mushrooms to the egg mixture and stir.

The Quiche:

Pour the egg mixture onto the pie dough, which should be in a “pie plate”.

Grate some cheese on top of it (about 1-2 c.)

Stick in the oven for about 40 minutes at 375 f.

French Toasts

This makes about 10-12 French toastsimg_6770-version-2.jpg

Mix:

4 eggs + 1 tsp sugar +1 tsp salt + 1 c. milk

Then coat your bread slices one at a time in the mixture and cook them until nice and brown.

PS: add cinnamon & vanilla to the mixture, it’s quite good.
